Each week I meal prep lunches for my husband to bring to work. I've been doing this for a few years now, so I have had to come up with new recipes and tricks to mix things up so that he doesn't get bored!

How to Keep From Getting Bored with Meal Prep Lunches

Meal prep lunches can easily become repetitive and boring, especially if you are primarily eating chicken every day. But I've come up with a few tricks to change things up.

Use a marinade: Adding a marinade like this recipe has is a great way to change up the flavor of your chicken. There are so many different marinade recipes out there that can totally change up the taste of your lunches. Here are 5 different chicken marinades that are Whole30 approved, too.

Add a cheese: My favorite way to mix things up and add flavor is by topping your bowls with a little bit of cheese. For this Italian recipe I used parmesan cheese, but depending on the type of bowl you are making you could add goats cheese, bleu cheese, cheddar cheese or whatever you have in the house.

Make 2 Things to Alternate During the Week: You don't have to make 2 totally different recipes, but just make 2 different types of meats or use 2 different marinades or use different vegetables.

Substitutions for This Recipe

Want to mix things up or need to make some dietary changes? Here are some helpful ideas for you.

Add a base: You can add a base to these bowls if you like, such as pasta or rice (cooked according to the directions on the package). If you want to keep these bowls low carb, you could add a base of cooked zucchini noodles.

Cheese Substitutions: If you don't eat dairy, you can omit the cheese or use a dairy-free cheese. If you want to use a different cheese, some that I recommend for this recipe are romano, asiago, or goat cheese.

Vegetable Substitutions: I love the combination of veggies for this meal, but can omit or substitute if necessary. For the tomatoes I used grape tomatoes, but you could also use cherry tomatoes or a whole diced tomato. If desired you can substitute kale for the spinach.

How to Serve these Bowls

Keep your bowls in the refrigerator until ready to eat. You can serve them cold right from the refrigerator or heat up using a microwave.

Meal prep lunches you will look forward to! These Italian Chicken Meal Prep Bowls are made in one pan and are low carb. Boneless chicken marinated in an easy Italian marinade and cooked in one pan with tomatoes and spinach.

Ingredients

For the Marinade

  • 1/4 cup olive oil
  • 1 teaspoon each of basil, oregano and garlic powder
  • 1/2 teaspoon each of salt and pepper
  • 1 1/2 pounds boneless chicken breasts, cut into cubes

Everything Else

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 pint grape (or cherry) tomatoes
  • 1 tablespoon minced garlic
  • 2 cups fresh spinach leaves
  • 1 cup shredded parmesan cheese

Instructions

For the marinade:

  1. Combine the olive oil, basil, oregano, garlic powder, salt and pepper in a gallon ziploc bag and shake to combine.
  2. Add the chicken to the bag and seal. Marinate for at least 15 minutes or up to 24 hours (put it in the refrigerator if marinating for longer than 15 minutes)


Everything Else:

  1. After the chicken is marinated, heat the 2 tablespoons of olive oil in a large skillet over medium high heat. Brown the chicken on all sides.
  2. Add in the onions and tomatoes and stir, then cover and cook for 3-5 minutes or until the onions are beginning to get tender and translucent.
  3. Add in the minced garlic and spinach and stir. Cover and cook for 3-5 minutes or until the spinach is wilted and the chicken is cooked throughly.
  4. Let cool and the divide into 5 containers and top each serving with shredded parmesan cheese. Refrigerate until needed and serve cold or warmed up.

Notes

Optional Base: If desired, you can add a base to these bowls such as pasta or rice (cooked according to the directions on the package), or cooked zucchini noodles.
